The Cheesemonger’s Notes
Distinctive Sussex semi-hard cheese with vibrant natural colour and smooth, mellow flavour
Woodside Red is a semi-hard cow’s milk cheese made in West Sussex by Alsop & Walker. Naturally coloured using annatto, it has a smooth, creamy texture and a mild, mellow flavour with gentle savoury depth and a subtle Cheddar-like character.
Woodside Red is an award-winning artisan cheese made by Alsop & Walker in West Sussex, recognised for both its striking appearance and beautifully balanced flavour. Its warm orange interior and natural red rind are created using a natural colouring derived from a South American thistle, giving the cheese its distinctive character without affecting its purity or quality.
Made using pasteurised cow’s milk and vegetarian rennet, Woodside Red is matured for around four months to develop its smooth, creamy texture. The careful maturation allows the flavours to deepen while preserving the cheese’s gentle and approachable nature.
The flavour is mellow and creamy with subtle savoury depth and a delicate hint of cheddar-like character. Its smooth consistency and balanced profile make it both versatile and highly enjoyable, appealing to a wide range of tastes.
Winner of a Gold Award at the British Cheese Awards, Woodside Red stands as a testament to the quality and craftsmanship of modern British artisan cheesemaking.
