Made on Copys Green Farm in Wighton, North Norfolk, Binham Blue is one of the county’s most celebrated cheeses and a defining example of modern British farmhouse blues.
Crafted using pasteurised cow’s milk from Catherine Temple’s own herd, Binham Blue develops a dense yet creamy texture, threaded with delicate blue veining. Unlike aggressively sharp blues, it offers balance and restraint, allowing flavour to build gradually.
The first impression is rich and creamy, followed by savoury depth and a gentle mineral tang. As it develops on the palate, subtle spice and earthy complexity emerge, finishing clean and long without overwhelming the senses.
