The Cheesemonger’s Notes
A rugged, mature West Country Cheddar aged on the Dorset coast for exceptional depth and crystalline texture
Coastal Cheddar is a traditional West Country Farmhouse Cheddar made using time-honoured methods and matured for up to 15 months to develop its distinctive character. Produced using high-quality milk from local free-range dairy herds grazing the lush pastures of the West Country, it represents the enduring craft of traditional British cheddar making.
Made almost entirely by hand, the cheesemaking process follows recipes and techniques refined over centuries. The curds are carefully turned, pressed into traditional cylindrical moulds, and wrapped in cheesecloth before entering the maturation process. During ageing, each cheese develops a natural surface mould, an essential part of the process that contributes to its complexity and depth of flavour.
As Coastal Cheddar matures, it develops its hallmark texture—firm yet slightly crumbly, with a distinctive crystalline crunch. These naturally occurring calcium lactate crystals form over time and provide a satisfying texture alongside the cheese’s rich, savoury character.
The flavour is bold and expressive. Deep savoury richness is balanced by toasted nutty notes and subtle caramel sweetness, while the extended ageing brings complexity and a long, lingering finish. A gentle lactic brightness adds balance, preventing the cheese from becoming overwhelming.
Aged in the unique coastal climate of Dorset, Coastal Cheddar reflects both its environment and traditional craftsmanship. Its rich, rugged character has made it one of the most widely recognised and awarded traditional Cheddars, earning Gold Medals at both the British Cheese Awards and the International Cheese Awards.
