An artisan Somerset Cheddar with deep brothy richness, clothbound tradition, and true sense of place

Westcombe Cheddar is a traditional clothbound Cheddar made at Westcombe Dairy in East Somerset using unpasteurised milk from their own herd. Recognised as one of only three cheeses officially classified as Artisan Somerset Cheddar by Slow Food UK, it represents the very highest level of traditional British farmhouse cheesemaking.

Made using raw milk collected fresh from the dairy’s own cows, the milk travels only metres from parlour to vat while still warm, preserving its full natural character. Traditional starter cultures and rennet are used to form the curds, which are then carefully cut, stacked, turned, and milled entirely by hand. This slow and deliberate process ensures the cheese develops its distinctive texture and flavour.

Once formed, the cheeses are clothbound in muslin, coated in lard, and transferred to Westcombe’s purpose-built ageing cellar, carved into the clay hillside. Here, they mature slowly for between 12 and 18 months, allowing the cheese to develop depth, balance, and complexity while responding naturally to the cellar’s unique environment.

The texture is firm yet smooth, with a structured breakdown that delivers both density and creaminess. The flavour is deep and layered, beginning with savoury, brothy richness and a mellow lactic tang. Notes of toasted hazelnut and caramel emerge, balanced by subtle citrus brightness that lifts the finish. The flavour lingers long on the palate—earning it the local nickname of a “five mile Cheddar,” as its presence remains long after the first bite.

Westcombe Cheddar reflects the full terroir of the farm—its pasture, soil, and herd—creating a cheese that is both deeply traditional and unmistakably individual.

How long will this cheese last?

All cheeses are cut fresh at the counter and dispatched in insulated packaging.

For the best flavour, we recommend enjoying within 5–7 days of delivery. Hard cheeses may last longer if stored correctly.

How should I store this cheese?

Keep refrigerated in its original wrapping or waxed paper. Avoid airtight plastic containers. Always bring to room temperature 30–45 minutes before serving for the best flavour and texture.

Is this cheese suitable for freezing?

We don’t recommend freezing soft or blue cheeses as it can affect texture. Hard cheeses may be frozen for cooking purposes, but flavour is best when enjoyed fresh.

What if my cheese has mould on it?

Mould is a natural part of many artisan cheeses.

If the cheese is meant to have a white rind, blue veining or natural mould, this is completely normal and part of its character.

If you notice surface mould on a hard cheese, it can usually be trimmed away safely — simply cut at least 1cm around and beneath the mould.

If mould appears on a soft cheese that is not intended to have mould, or if you are unsure, please contact us and we will advise.

We only dispatch cheeses in excellent condition, selected at peak maturity.

Is this cheese safe during pregnancy?
