Often overlooked and consigned to the kitchen, this Taleggio deserves centre stage on your cheeseboard. Handmade in tiny batches by a village co-operative in the heart of Val Taleggio, it’s crafted using raw milk from several small local farms — a far cry from the mass-produced versions found elsewhere.
Its rosy, occasionally mould-mottled rind wraps around a silky, fruity paste. As it matures, the edges soften luxuriously, while the centre stays crumbly and fresh, creating a beautiful contrast in both texture and flavour.
A soft washed-rind cheese that’s as complex as it is indulgent, this Taleggio offers a true taste of its Alpine homeland.
