Sheep Rustler is a semi-hard ewe’s milk cheese handmade by Peter Humphreys at White Lake Dairy, Bagborough Farm in Shepton Mallet, Somerset. Created as a sheep’s milk counterpart to their popular goat’s cheese Rachel, it features a striking orange-brown rind with natural specks of mould that add to its rustic charm.
The flavour is warm, nutty, and gently sweet, with subtle meadow-like notes that make it ideal for summer cheeseboards. Its smooth, supple texture and balanced depth pair beautifully with delicate white wines and a spoonful of quince jam.
