Creamy, nutty, and gently gamy with a striking pyramid shape
This elegant new ewe’s milk cheese from White Lake Cheese in Somerset is moulded into a truncated pyramid and dusted with a delicate layer of ash. Over time, geotrichum and glaucum moulds develop across the rind, breaking down the paste and creating a beautifully silky, creamy texture.
Inside, the cheese is springy and soft, melting on the palate with notes of sweet cream, fresh cobnuts, and a delicate lanolin gaminess that adds complexity without overpowering. Young, yet refined, this is a stunning addition to any cheeseboard – as beautiful to look at as it is to eat.
