Oak Smoked Northumberland is a handcrafted farmhouse cheddar made at Doddington Farm in Northumberland, using milk from the farm’s own herd of Friesian and Ayrshire cross cows. After careful maturation, the cheese is gently cold-smoked over oak, enhancing its natural character while preserving the integrity of the original cheese.
The smoking process is carefully controlled to complement rather than overpower the cheese, allowing the creamy, savoury qualities of the cheddar to remain at the forefront. The texture is firm yet smooth, reflecting its traditional farmhouse production.
The flavour is rich and balanced, combining the creamy, nutty depth of mature cheddar with a gentle, warming smokiness. The oak smoke adds complexity and length to the finish, creating a cheese that is both comforting and distinctive.
