Manchego PDO is one of Spain’s most renowned and celebrated cheeses, made exclusively in the La Mancha region from the milk of Manchega sheep. Protected since 1984 with PDO status, it’s aged anywhere from 60 days to 2 years to develop its distinctively nutty, gently tangy flavour.
The texture is firm and slightly open, with a buttery richness and an ivory-to-pale yellow colour that deepens with age. Often dotted with small air pockets, Manchego’s flavour is clean, savoury, and unmistakably sheep’s milk – without being overpowering. Perfect when paired with quince paste for a truly authentic Spanish experience.
