A rich, nutty British Alpine-style cheese from King Stone Dairy
Burford is an exceptional alpine-style hard cheese handmade at King Stone Dairy in Chedworth, Gloucestershire. Crafted by award-winning cheesemaker David Jowett, it’s made using pasteurised organic cow’s milk from the farm’s own herd of Holstein Friesians and Shorthorns, which graze on diverse herbal pastures throughout the Cotswolds.
This cheese captures the essence of high summer milk, offering deep, roasted flavours reminiscent of caramelised onions and toasted nuts, balanced by a delicate sweetness. Its firm yet buttery texture melts beautifully on the palate, while its washed rind adds subtle savoury complexity and a gentle aroma.
Produced using traditional Alpine techniques, including cooking the curd and washing the rind during maturation, Burford develops a rich, nutty and slightly fruity character. It pairs wonderfully with crusty bread, apples, pears, and nuts, and complements dry white wines, light reds, and crisp ciders. Also superb grated over pasta, melted into sauces, or baked into tarts and gratins.
