Grès d’Alsace is a traditional washed rind cheese from the Alsace region of eastern France, an area renowned for its rich cheesemaking heritage and strong culinary identity. Named after the sandstone (“grès”) soils of the region, this cheese reflects both its landscape and the skill of its makers.
Made using cow’s milk and carefully matured, Grès d’Alsace develops a soft, supple texture beneath its characteristic washed rind. During maturation, the rind is regularly washed to encourage the growth of beneficial surface cultures, which contribute to both the cheese’s appearance and its flavour.
The interior becomes smooth and creamy, while the flavour develops a savoury depth with gentle earthiness and subtle nutty undertones. Despite its aromatic rind, the paste remains balanced and approachable, delivering richness without overwhelming intensity.
