Chaumes is a soft, washed rind cheese crafted in the village of St Antoine, nestled at the foothills of the French Pyrénées. Made using ancestral Trappist-style methods with pasteurised cow’s milk, it matures over four weeks to develop a springy, creamy paste and a golden, aromatic rind.
The name "Chaumes" means “stubble” in French, and this characterful cheese certainly leaves an impression. Its flavour is rich, full-bodied, and layered, with a lingering hazelnut-like finish. Smooth, supple, and deeply satisfying, Chaumes is a true taste of the Southwest’s cheesemaking heritage.
