Chaource is a rich, soft French cheese made from cow’s milk, originating from the Champagne and Burgundy regions of France. Renowned for its melt-in-the-mouth texture, Chaource offers a delicate, milky flavour with gentle nutty notes and subtle hints of mushroom as it matures.
Encased in a fine, white velvety bloomy rind, the cheese becomes increasingly creamy towards the centre as it ripens, often developing light orange speckling on the rind with age — a sign of maturity rather than strength. The flavour remains elegant and balanced, never overpowering, making it a favourite for those who enjoy soft cheeses with refinement rather than intensity.
