Made from raw Montbéliarde cow’s milk — the same rich, protein-packed milk used in classic French cheeses like Comté and Vacherin — Baron Bigod is crafted using gravity-fed milk and traditional pelle-à-brie ladles to preserve the milk’s delicate structure. The result is a bloomy-rinded cheese with a golden, gooey centre and complex flavours of milk, mushroom, and rich earthiness. Aged up to 8 weeks in cave-like conditions, this is a truly world-class British Brie.
