Affineur Walo Aged Emmental is a traditional Swiss hard cheese made from raw cow’s milk, carefully matured by Walo von Mühlenen. Aged for extended periods, it has a firm yet supple texture with characteristic large eyes and a rich, nutty flavour, combining toasted hazelnut notes with gentle sweetness and a long, smooth finish.
Affineur Walo Aged Emmental is a superb example of traditional Swiss Alpine cheesemaking, carefully selected and matured by master affineur Walo von Mühlenen. Known for his expertise in refining and ageing exceptional cheeses, Walo ensures each wheel reaches its full potential, developing complexity, balance, and depth.
Made using unpasteurised cow’s milk from Alpine herds, the cheese is matured over an extended period, allowing its characteristic texture and flavour to fully develop. The paste becomes firm yet supple, with the classic large eyes associated with traditional Emmental.
The flavour is rich, nutty, and savoury, offering toasted hazelnut notes, gentle sweetness, and a long, smooth finish. Careful ageing enhances the cheese’s depth while preserving its elegant balance, making it both distinctive and highly versatile.
