Rædwald (pronounced Redwold) is Suffolk’s answer to Reblochon — a washed-rind cheese with a firm, toothsome crust and a smooth, oozing centre. Made only during the coldest months of the year (January to March), it uses the richest, most cream-laden winter milk from the Fen Farm herd. Its deep, savoury flavours evoke roasted meats, fresh hazelnuts, woodland fungi, mossy bark, sea brine, and the cool shade of ancient trees.
Named after the 7th-century Anglo-Saxon king of East Anglia and inspired by the haunting legacy of Sutton Hoo, Rædwald is more than a cheese — it’s a sensory story of place, history, and season. Sold out for now… but worth waiting for.
