Winslade is an exceptional soft cheese made by the team at Hampshire Cheese Company, creators of the acclaimed Tunworth. Inspired by the great Alpine cheeses such as Vacherin Mont d’Or, Winslade is encircled with a strip of spruce bark, which supports the cheese as it matures and imparts subtle aromatic complexity.
Made using pasteurised cow’s milk, Winslade develops a delicate bloomy rind while the interior gradually softens to a beautifully creamy, spoonable consistency. The spruce bark helps regulate moisture and contributes gentle woody, resinous notes that enhance the cheese’s character.
The flavour is rich, buttery, and deeply savoury, balanced by fresh creaminess and subtle forest-like aromatics. As it ripens, the texture becomes luxuriously soft, making it ideal for scooping and sharing.
