Gruyère AOP is one of Switzerland’s most celebrated cheeses, produced in the Alpine regions using traditional methods protected under strict AOP designation. Made for centuries, Gruyère represents the pinnacle of Alpine cheesemaking, where milk quality, craftsmanship, and careful maturation combine to create a cheese of exceptional character.
Made using unpasteurised cow’s milk and matured for a minimum of five months — often much longer — Gruyère develops a firm yet supple texture. Unlike some Alpine cheeses, it typically has few or no holes, instead offering a dense, smooth paste that reflects its careful production.
