St Jude is a small, soft cheese with a rich, buttery flavour and a luxuriously light, fluffy, almost mousse-like texture. Made using raw cow’s milk and animal rennet, it’s crafted by Julie Cheyney at White Wood Dairy on Fen Farm in Bungay, Suffolk. Like its cousin Baron Bigod, St Jude is made from the protein-rich milk of Montbéliarde cows — traditionally used in Alpine cheeses like Comté and Vacherin.
