St Giles describes its approach as “Internationally inspired. Perfected locally.” It is a particularly appropriate description of how this Norfolk distillery came about.
Founder Simon Melton's career as a professional diver took him to unusual places around the world. Along the way he explored different gins, visited distilleries and spent years developing his knowledge of the spirit.
Back home in Norfolk, those experiences eventually became the inspiration for St Giles.
Today the spirits are handcrafted at the St Giles distillery with Head Distiller Pete Margree and Anna, their custom-made copper still. The result is a range that combines Norfolk production with ingredients and flavour ideas that aren't constrained by Norfolk's borders.
That sense of exploration runs throughout the collection – from exotic botanicals in the Signature Gin and fruit-led expressions to a Navy Strength gin whose story comes directly from Simon's life beneath the sea.
Why is it called St Giles?
There are actually two connections behind the St Giles name.
St Giles in London became synonymous with gin shops during the 18th century, giving the name a historical connection to Britain's long relationship with gin.
But there is a Norfolk connection too.
St Giles Street in Norwich is one of the city's historic streets, and Simon and his family had their own 18th-century shop there.
It's a name that therefore brings together gin history and the family's own connection to Norwich.
A Norfolk distillery with a spirit of adventure
St Giles isn't simply a Norfolk name attached to a bottle.
Its spirits are handcrafted in Norfolk at the company's purpose-built distillery, using its custom copper still.
What makes the range particularly interesting, however, is that being a Norfolk distillery hasn't resulted in a range concerned only with local flavours.
St Giles deliberately looks further afield for inspiration, combining its Norfolk home with botanicals, fruits and ideas influenced by Simon's travels.
Even within the range there are very different approaches. Raspberry, Rhubarb & Ginger Gin uses fresh local fruit, combining distilled rhubarb with an infusion of raspberries, while the 57% ABV Divers' Edition uses ten botanicals including Norfolk samphire, cubeb berries, liquorice root and sea kelp.
It's Norfolk distilling with a deliberately international outlook.
