Vacherin Mont d’Or is one of the most celebrated seasonal cheeses of the French Jura Mountains, produced only during the autumn and winter months when the milk of pasture-fed cows develops exceptional richness. Protected by AOP status, this iconic cheese reflects centuries of Alpine cheesemaking tradition.
Made using cow’s milk and encircled in a strip of spruce bark, Vacherin Mont d’Or is matured carefully in its wooden box. The spruce bark helps support the delicate cheese while imparting subtle woody and resinous notes that enhance its complexity.
As it matures, the interior becomes luxuriously soft and spoonable, with a silky, molten texture beneath its washed rind. The flavour is rich, savoury, and deeply comforting, offering creamy indulgence balanced by gentle earthiness and subtle forest-like aromatics from the spruce.
