A Rare, Seasonal Cheese with Silky Richness & Fondue-Like Decadence
Vacherin Mont d'Or is a luxurious soft, washed-rind cheese steeped in over 200 years of Alpine cheesemaking tradition. Known as Vacherin du Mont d’Or in Switzerland and Vacherin du Haut-Doubs in France, it’s made from pasteurised cow’s milk and wrapped in spruce bark, which imparts a delicate, resinous note.
When mature, it becomes irresistibly spoonable, its centre turning almost liquid—perfect for baking whole or eating like a fondue. The grayish-yellow blanched rind should be removed before serving, unveiling a cheese that’s full-flavoured, slightly acidic, with a gentle lemony tang.
Available only between 15th August and 31st March, this is a truly seasonal treat best served warm with crusty bread, potatoes, or charcuterie. Pair with a crisp Sauvignon Blanc or Champagne to elevate the experience.
