Suffolk Blue Brie is a handcrafted soft blue cheese made by Suffolk Farmhouse Cheeses, a family-run dairy established in 2004 by Jason and Katharine Salisbury in the Suffolk countryside. Produced using milk from their own small herd of pedigree Guernsey and Jersey cows, it represents a perfect harmony between traditional Brie and blue cheese styles.
The herd itself is central to the cheese’s character. Comprising around 80 award-winning cows—each known individually and cared for to exceptional standards—the milk they produce is naturally rich and golden, contributing directly to the cheese’s creamy texture and depth of flavour. The cows graze freely on lush Suffolk pastures in warmer months and are comfortably housed during colder weather, ensuring consistent milk quality year-round.
Suffolk Blue Brie is made in small batches using traditional methods, allowing the milk’s richness and complexity to shine through. Beneath its delicate bloomy rind lies a creamy, golden paste threaded with fine blue veining. The texture is smooth, velvety, and becomes increasingly soft and almost spoonable as the cheese matures.
The flavour offers a beautifully balanced meeting of two beloved styles.
