The washed-rind sister cheese to St Jude, with warming, nutty depth
St Cera is the washed-rind sister cheese to St Jude, made by the team at St Jude Dairy using milk from their own farm in Norfolk. After around a week of maturation, selected St Jude cheeses are set aside and gently washed in a brine solution, encouraging the development of a distinctive pink-orange blush on the rind.
This washing process transforms the cheese. As it matures, St Cera develops warmer, deeper flavours than its natural-rind counterpart, with nutty, savoury notes that strengthen and broaden with age. The texture remains supple and creamy, while the rind adds complexity and character without overpowering the cheese itself.
St Cera is a beautifully balanced washed-rind cheese — expressive but approachable — making it an excellent introduction to the style as well as a rewarding choice for experienced cheese lovers.
