Pyghtle – A Delicate, Fresh Sheep’s Cheese from Suffolk

Named after the old Anglo-Saxon word for a small field, Pyghtle is a handcrafted sheep’s milk cheese made by Emily Tydeman at Broughton Hall Dairy. This small, log-shaped cheese features a pale, wrinkled rind and a fluffy white paste that is light, delicate, and full of promise.
Still in development, Pyghtle’s early batches have revealed a fresh, bright flavour with subtle herbal or tobacco-like notes, varying gently with the seasons. With a minimum weight of 180g, it’s a beautiful cheese with a true sense of place and potential.
