Old Winchester is a celebrated British hard cheese made by the Smales family at Lyburn Farm in Hampshire. Inspired by traditional Alpine and aged Gouda styles, this cheese has earned widespread recognition for its depth of flavour and exceptional texture.
Made using pasteurised cow’s milk and matured for around 18 months, Old Winchester develops a firm, dense structure with the formation of natural crystals throughout the paste. These crystals provide a delicate crunch and are a hallmark of careful ageing and outstanding cheesemaking.
The flavour is rich and complex, combining caramel sweetness with nutty depth and savoury warmth. Its smooth yet crystalline texture enhances the eating experience, delivering both structure and indulgence.
