Once prized in Georgian and Victorian kitchens, medlars are a traditional British fruit with a distinctive character — soft, aromatic, and gently spiced, often compared to a blend of apple, quince, and rosehip. Slow-cooked in small batches, this jelly develops a rich amber colour, a smooth, jewel-like texture, and a beautifully balanced sweet-sharp profile.
