Mayfield Swiss is a semi-hard, Swiss-style cheese made in West Sussex by Alsop & Walker using cow’s milk. Matured for 5–7 months, it has a firm yet creamy texture with characteristic “eyes” and a sweet, nutty flavour inspired by traditional Alpine cheeses such as Emmental.
Mayfield Swiss is an exceptional British take on traditional Alpine cheesemaking, crafted by Alsop & Walker in West Sussex. Inspired by classic Emmental styles, this award-winning cheese combines careful maturation with outstanding milk quality to create a cheese of remarkable balance and depth.
Made using pasteurised cow’s milk and vegetarian rennet, Mayfield Swiss is matured for around 5 to 7 months. During this time, it develops its signature “eyes” — the small holes that form naturally as part of the cheesemaking process — along with a firm yet creamy texture.
The flavour is sweet, nutty, and beautifully rounded, with a gentle creaminess that carries through to a complex, lingering finish. Its smooth texture and balanced profile make it equally enjoyable eaten on its own or used in cooking.
