What is a liqueur?

A liqueur is a spirit that has been sweetened and flavoured.

The base might be gin, vodka, rum, whisky or another spirit, to which flavours can be introduced using fruits, herbs, spices, botanicals or other ingredients.

That's why two drinks both described as liqueurs can have almost nothing in common when it comes to flavour.

One might be bright, fruity and refreshing; another dark, rich and warming.

What's the difference between a spirit and a liqueur?

The easiest distinction is to think of a liqueur as a flavoured and sweetened spirit.

Gin, whisky, vodka and rum each have their own definitions and methods of production. A liqueur takes a spirit base and adds another layer of flavour and sweetness.

Liqueurs also tend to have a lower alcoholic strength than many full-strength spirits, although this varies considerably between individual bottles.

Are all liqueurs very sweet?

Not necessarily.

Sweetness is part of what defines a liqueur, but that doesn't mean every bottle has to taste sugary.

Fruit acidity, bitterness, herbs, spices and the underlying spirit can all balance that sweetness.

Some liqueurs are deliberately rich and indulgent, while others can be remarkably fresh, sharp or complex.

If you've previously dismissed liqueurs as being too sweet, it's worth looking at the individual ingredients and flavour profile rather than judging the entire category.

What flavours can you find in Norfolk Liqueurs?

Depending upon the producer and season, you might encounter berries and orchard fruits, citrus, herbs, flowers, spices and other botanicals, alongside more unusual combinations created by individual Norfolk makers.

What's the difference between a fruit gin and a gin liqueur?

The terminology can sometimes be confusing.

A full-strength flavoured gin must still meet the requirements for gin, including having juniper as its predominant flavour.

A gin liqueur uses gin as its base but is sweetened and is typically bottled at a lower alcoholic strength. The additional fruit or flavour can also play a much more prominent role.

So while the two can appear similar on the shelf, they aren't necessarily the same type of drink.

How do you drink a Norfolk Liqueur?

One of the attractions of liqueurs is their versatility.

Many can be enjoyed neat or over ice, particularly after dinner. Others work beautifully with tonic, soda or sparkling wine.

Liqueurs are also enormously useful in cocktails, where a relatively small amount can introduce fruit, sweetness, spice or botanical character without requiring lots of additional ingredients.

Some even work particularly well poured over desserts or used as an ingredient in cooking.
