Suffolk Blue is a beautifully smooth, indulgent, lightly blue-veined cheese handmade at Whitegate Farm in Creeting St Mary, Suffolk. Crafted by husband-and-wife team Katharine and Jason Salisbury of Suffolk Farmhouse Cheeses, it is a shining example of East Anglia’s growing reputation for producing world-class artisan cheese.
The Salisburys’ dedication to quality runs through every stage of production. Their small herd of Guernsey and Jersey cows is milked using an innovative robotic milking system, allowing the cows to choose when they are milked and ensuring optimum comfort, welfare and milk quality. This exceptional milk forms the foundation of Suffolk Blue’s rich, velvety flavour.
Made with pasteurised cow’s milk, Suffolk Blue offers a gentle, buttery profile with a mellow blue tang that’s never sharp or overwhelming. Its fine blue veining runs through a soft, creamy paste, giving it a luxurious mouthfeel that appeals to both blue-cheese newcomers and seasoned aficionados.
