Stinking Bishop is one of Britain’s most famous washed rind cheeses, made by Charles Martell & Son at Manor Farm in Gloucestershire. Despite its provocative name, this cheese is celebrated not just for its aroma, but for its exceptional depth, texture, and flavour.
Made using pasteurised cow’s milk, the cheese is washed during maturation in perry made from the rare Stinking Bishop pear, a traditional Gloucestershire variety. This washing process encourages the growth of its distinctive orange rind and contributes to its unique character.
