The Cheesemonger’s Notes
A creamy, lightly blue-veined cheese with depth, balance, and unmistakable farmhouse character
Suffolk Blue is a soft, creamy blue cheese made in Suffolk by Suffolk Farmhouse Cheeses using cow’s milk. It has a smooth texture with delicate blue veining and a mild, balanced flavour—rich and buttery with a gentle savoury tang rather than a strong, overpowering bite.
Suffolk Blue is a handcrafted blue cheese made by Suffolk Farmhouse Cheeses, a family-run dairy established in 2004 by Jason and Katharine Salisbury in the Suffolk countryside. Produced using milk from their own herd of award-winning pedigree Guernsey and Jersey cows, it reflects the richness and quality that only true farmhouse production can deliver.
The herd itself lies at the heart of the cheese. Each cow is known individually and cared for to the highest standards, grazing on lush pastures during the warmer months and housed comfortably during colder weather. This careful stewardship produces naturally rich, golden milk, which provides Suffolk Blue with its distinctive creaminess and depth of flavour.
Made in small batches using traditional methods, Suffolk Blue develops a smooth, creamy texture and delicate blue veining throughout the paste. The blue veining can vary in appearance depending on the season and conditions during maturation, but this natural variation does not affect the cheese’s depth or balance of flavour.
The flavour is rich and rounded, beginning with buttery creaminess and gentle sweetness before developing a subtle savoury tang from the blue cultures. Unlike stronger blue cheeses, Suffolk Blue remains refined and approachable, offering complexity without harshness. The finish is smooth and lingering, with a quiet savoury warmth that makes it incredibly moreish.
Its texture is soft and creamy, becoming more yielding as it matures while maintaining its structure. This balance makes Suffolk Blue equally suited to cheeseboards, cooking, or simply enjoying on its own.
Made entirely using milk from Suffolk Farmhouse Cheeses’ own herd and matured with care, Suffolk Blue reflects the dedication and craftsmanship of a true farmhouse dairy.
