The Cheesemonger’s Notes
Exceptional Alpine-style cheese from Bath with rich nuttiness and smooth, complex character
Wyfe of Bath is a celebrated British hard cheese made by Bath Soft Cheese Company using milk from their own pasture-fed herd. Created by cheesemaker Richard Padfield, this award-winning cheese draws inspiration from traditional Alpine styles while expressing the character of the Somerset countryside.
Made using pasteurised cow’s milk and matured carefully, Wyfe of Bath develops a firm yet supple texture with a smooth, creamy consistency. During maturation, the cheese develops depth and complexity while retaining its elegant balance.
The flavour is rich, nutty, and savoury, with notes of toasted nuts, gentle sweetness, and a long, refined finish. Its balance and complexity have earned it significant recognition, including being named Supreme Champion at the World Cheese Awards 2014.
Wyfe of Bath stands as one of the finest examples of modern British Alpine-style cheesemaking.
