The Cheesemonger’s Notes
Allgäu semi-hard cheese infused with six peppers for creamy richness and vibrant spice
Shadow Blossom is a semi-hard Alpine-style cheese from Austria made with cow’s milk, coated in a blend of five peppers and spices. Inspired by Alp Blossom, it has a smooth, slightly firm texture with a mild, creamy flavour, lifted by aromatic spice notes from wild Madagascan pepper, long pepper, tailed pepper, Kampot pepper, pink berries, and a hint of cardamom.
Schattbuch Pepper Blossom is a distinctive semi-hard cheese from the Allgäu region of Bavaria, created through a collaboration between Hofkäserei Kraus and the Michelin-starred Restaurant Schattbuch. This partnership brought together traditional Alpine cheesemaking and innovative culinary flair to produce a cheese of real individuality.
Made from thermised cow’s milk sourced from two nearby traditional Allgäu farms, the base cheese is a classic Alpine-style semi-hard wheel matured for around three months. It develops a pleasantly supple yet slightly crunchy texture, reflecting its careful ageing and high-quality milk.
What sets this cheese apart is the addition of six carefully selected pepper varieties: Wild Madagascar pepper, long pepper, tailed pepper, Kampot pepper, pink berries, and cardamom. These spices are expertly blended into the cheese, delivering warmth, aromatic complexity, and gentle heat without overwhelming its creamy, buttery foundation.
The result is a cheese that is smooth and rich at first bite, followed by layered spice, subtle sweetness, and a long, warming finish. It is bold yet balanced — a natural partner for wine and a standout on any cheeseboard.
