Roquefort Société is one of the world’s most historic and revered blue cheeses, made using traditional methods and matured in the natural Combalou caves of Roquefort-sur-Soulzon in southern France. Société was founded in 1863 and remains one of the most respected producers of authentic Roquefort, preserving techniques that have defined this legendary cheese for centuries.
Made exclusively from unpasteurised sheep’s milk, Roquefort develops its distinctive character through maturation in the region’s unique limestone caves, where natural airflow and humidity create ideal conditions for the growth of Penicillium roqueforti. This process produces the cheese’s signature blue veining and extraordinary depth of flavour.
The texture is moist, creamy, and slightly crumbly, while the flavour is bold, complex, and deeply savoury. Expect a rich salinity balanced by tangy brightness and a long, powerful finish. Despite its strength, Roquefort retains remarkable balance and elegance.
