The Cheesemonger’s Notes
A handcrafted sheep’s milk cheese with natural rind development and beautifully balanced depth
Nettus is a semi-soft sheep’s milk cheese made in East Anglia using locally produced milk. It has a natural rind and a smooth, supple texture, with rich, creamy flavours balanced by gentle nuttiness and subtle earthy notes that develop as it matures.
Nettus is an artisan sheep’s milk cheese made by Emily using locally produced milk, reflecting both the richness of the milk and the careful, small-scale approach that defines true farmhouse cheesemaking. What began in 2020 during lockdown as a personal passion has grown into a dedicated enterprise, with Nettus now enjoyed across East Anglia and throughout the UK.
Made using sheep’s milk produced during the lush spring and summer grazing season, Nettus captures the richness and complexity that comes when animals feed on diverse pasture. This seasonal milk provides the ideal foundation for a cheese that is both expressive and deeply satisfying.
The cheesemaking process involves an early rind wash, followed by careful brushing as the cheese matures. This allows natural moulds to develop gradually on the surface, creating a protective rind that contributes both texture and flavour. Nettus is matured for a minimum of three months, allowing its full character to emerge while maintaining balance and refinement.
The texture is semi-soft and supple, offering a smooth, creamy mouthfeel with gentle structure. The flavour is rich and layered, beginning with sweet cream and butter notes typical of sheep’s milk, followed by subtle nuttiness and savoury warmth. As it matures, delicate earthy tones develop from the natural rind, creating depth without overwhelming the cheese’s inherent balance.
Seasonally produced and matured to be enjoyed in the autumn, Nettus reflects both the natural rhythm of milk production and the care of its maker. It is a cheese rooted in place, season, and craftsmanship.
