The Cheesemonger’s Notes
Traditional farmhouse cheddar from Northumberland with rich flavour and true territorial character
Doddington North is a handcrafted farmhouse cheddar made at Doddington Farm in the Glendale Valley, Northumberland, where the rivers Glen and Till meet beneath the Cheviot Hills. Produced using milk from the farm’s own herd of Friesian and Ayrshire cross cows, this cheese reflects the landscape, farming, and careful stewardship that define true farmhouse production.
The herd grazes freely on pasture through the warmer months, with winter feeding based on home-grown silage, cereals, and fodder beet — ensuring consistent milk quality throughout the year. This attention to farming directly influences the flavour and character of the cheese.
Matured to allow its flavour to fully develop, Doddington North offers a firm yet creamy texture. The flavour is rich and savoury, with gentle nuttiness, subtle sweetness, and a balanced, lingering finish. It represents a classic territorial cheddar, rooted firmly in its place of origin.
This is traditional British farmhouse cheesemaking — honest, expressive, and deeply satisfying.
