Cornish Gouda is an award-winning farmhouse cheese made using milk from the farm’s own pedigree Holstein Friesian herd in Cornwall. Produced entirely on the farm, this cheese reflects the quality of the milk and the careful attention given to every stage of its production and maturation.
Matured for around 10 to 12 months, Cornish Gouda develops a firm yet creamy texture with the formation of natural calcium lactate crystals — a sign of proper ageing and a hallmark of quality. These crystals provide a delicate crunch that enhances the overall eating experience.
The flavour is rich and complex, combining creamy nuttiness with sweet caramel undertones and a smooth, lingering finish. The careful maturation brings depth and balance while preserving the cheese’s natural warmth and approachability.
This is Gouda in its traditional farmhouse form — expressive, rewarding, and deeply satisfying.
