Arguably the best-ever barrel-aged mead. This is woodland honey mead brewed in 2019 then after one year fermentation, aged in oak barrels for a further two years. The result is a very smooth mead where the woodland honey taste is notable with the addition of a "vanilla" overtone and richness from the barrel. Note this mead is technically "dry" which works superbly with the tannin of the oak. The maturing in barrels allows a secondary fermentation which causes this mead to be a little stronger, and consequently drier. At 15.7% abv we recommend treating this mead in a similar fashion to sherry or port: enjoying in small glasses.
