Description: Full-fat soft cheese made with pasteurised cows' milk and non-animal rennet. A soft almost runny cheese with a gentle enigmatic flavour coming from the chopped nettles that coat the rind. The cheese is supported with a beechwood lath and is wrapped in waxed paper. It develops mould spots in the nettle rind from time to time.
History: Launched in October 1999. May Hill is an important landscape feature of this part of Gloucestershire. It is topped by 99 pine trees and on May Day revellers assemble round these trees to greet the dawn. This cheese may have been conceived at one of these events.
