Gorgonzola Dolce DOP is a soft, blue, buttery, Italian blue cheese with the word “Dolce” meaning “sweet” in Italian. The cheese originates from the 12th century where it took its name from a small town in Lombardy near Milan. This is a pale and incredibly soft cheese with speckled blue veins running throughout. Traditionally ‘blued’ and ripened in rooms known as ‘purgatory’ where the temperature is kept around 72% F and humidity at a high 95%.
The rind of the cheese is hard, crumbly and grey in tone and is not edible. Gorgonzola Dolce DOP won Super Gold at the 2014 World Cheese Awards and has also been deemed one of the worlds best cheeses. A perfect summertime blue that can be liberally spread over crusty bread and delicious topped with fresh figs and apricots. It is rich and creamy – a beautifully soft, Italian classic.
