There are only 600 horned Allgäuer Braunvieh cows left in the world, and this cheese helps to ensure their survival.
Relatively young at five to seven months old, it’s nevertheless a powerful example of Alpine heritage. Washed in a mixture of elderflower cordial and burnt hay ash, the dark exterior contrasts with the golden paste.
