Very much a favourite Italian biscuit, made with aricot kernel flavour thse crunchy cookies are a must have in any decent kitchen pantry. They are the perfect biscuit to use in a trifle or why not use them for a flavoursome cheese cake base

The original amaretti biscuits were first created in the 18th century to celebrate the visit of the Cardinal of Milan to the town of Saronno.

According to the legend, in 1718 the Cardinal of Milan decided to visit the Sanctuary of the Blessed Virgin of the Miracles in Saronno. In honour of his visit, a young couple prepared a dough based on sugar, almonds and egg white which, made to rise in the oven, was used to create round biscuits that were called Amaretti.

Besides the legend, it was the Lazzaroni family, who moved to Saronno at the beginning of the 18th century, to become the flagship of this confectionery specialty.
