Gruyere Reserve AOP is a hard yellow Swiss cheese that originates from several boroughs of Switzerland. It is named after the town of Gruyeres and in 2001 received AOP status.
Gruyere Reserve AOP is a nutty, smooth textured Swiss mountain raw cow’s milk cheese, matured for over 10 months to give a good depth of flavour. It takes 400 litres of fresh, alpine milk to make a whole Gruyere cheese that then weighs around 35kg – 40kg. The cheese has slightly concave sides and a stamp of authenticity that also shows the age of the cheese. The original recipe was created in 1115 AD and has been passed down from generation to generation.
As well as fondue, GRUYERE is the perfect cheese to go on your cheeseboard or in sauces, Croque Monsieur or souffles.
