Quintessentially British, featuring four tiers of timeless and elegant cheese. A powerful British Brie, a classic creamy Stilton, an earthy Cheddar, and an ash covered goats’ milk cheese. Serves 30 to 40 People

Top tier
180g - Goat, Pasteurised
Made by Charlie Westhead. Dorstone is sprinkled with ash, and then ripened. When you cut through the matured cheese, it has faint veining reminiscent of Carrera marble. The curd is snowy-white, the texture ice cream, and the flavour mellow and rich.

Second tier
600g - Cow, Pasteurised
Our Cave-Aged Cheddar is made on the Ashley Chase Estate, between the rugged World Heritage Coastline and the Dorset Downs. The cheese is made from the milk of the Estate’s own herds, or from local Dorset farms within a thirty mile radius.
This strict local provenance of the milk ensures that the cheese can be awarded the coveted PDO status of West Country Farmhouse Cheddar.  It is fruity and tangy with a rich, deep flavour and a hint of sweetness.

Third tier
1.1kg - Cow, Pasteurised, Vegetarian
Colston Bassett Baby Stilton is an intensely rich and creamy cheese, which is produced by hand-ladling. Its flavour is deep, lingering and complex, with a smooth, velvety paste. The ‘Baby’ version is made to the same exacting standards as their big brothers, with the same rich and full flavour.

Bottom tier
1kg - Cow, Raw Milk
Baron Bigod is a stunning Brie-style cheese, with a rich, full, earthy flavour and a lingering finish. It’s made by Jonny Crickmore from the milk of his own herd of Montbeliarde cows in Suffolk. Jonny likes the cheese best when its wrinkly coat has broken down the golden, buttery paste under the rind, while a thin line of lactic curd at the centre remains.
