Jiffler is named after the Norfolk dialect word to Jiffle or to fiddle/mess around with. This relates to the constant moving around of the cheese during maturing that results in a luscious and velvety semi-firm cheese with a subtle touch of salt and herbs. Brined and aged to develop a natural rind. This cheese bursts with a bright and irresistible taste.
