Manchego PDO is one of the most popular and well-known cheeses from mainland Spain. Manchego PDO is made in the La Mancha region of Spain from ewe’s milk that comes from the Manchega breed of sheep and gained it’s PDO status in 1984. Manchego PDO is aged between 60 days to 2 years.
Manchego PDO is a firm, slightly buttery open textured cheese with a nutty flavour, that is distinctive although not too strong that leaves an aftertaste that is characteristic to ewe’s milk cheeses. Manchego PDO often has uneven air pockets distributed throughout its surface. The colour of the cheese varies from white to ivory with tinges of yellow depending on its age.
This cheese is perfect for enjoying with quince paste.
