The product is created by cheesemakers using a special recipe and profile before being transferred into the 500ft underground caves of a former slate mine situated in the remote mountains surrounded by the Snowdonia National Park and the protected Dark Sky Reserve
It has a deliciously savoury aroma, while its texture is irresistibly smooth and creamy with the occasional crunchy crystal – a highly desirable characteristic of aged cheeses. On the palate, its complex umami flavours are as deep as the caverns it is aged in. Sweet caramel notes then lead to a long finish with a savoury tang. Encased in cobalt-coloured wax to celebrate the rocks of these historical mines, it is the star of any cheeseboard of flavour that goes on and on. This is a great starter cheddar for those who prefer cheeses not too strong. Wonderful served with a crusty baguette and some good chutney and pickles – this is a cheese that has the strength of character to stand up to assertive flavours.
