Mrs Temples is the trading name for Catherine Temple of Copy's Green Farm at Wighton, Norfolk. The range of cheeses made spans from Gouda types such as Wells Alpine, and crumbly hard cheeses such as Walsingham. Copy's Green Farm is a leading player in terms of responsible & sustainable farming. Cheese production is fuelled by the energy created on the farm using biomass technology. Walsingham is an artisan pasteurised cow's milk cheese The cheese is pressed and matured, with a crumbly texture and has been described as a cross between Wensleydale and Cheddar. Whole cheeses weigh 2.8 to 3 kg Described as a cross between Wensleydale and Cheddar there are also passing similarities to a Lancashire Tasty.
