Mrs. Temples is the trading name for Catherine Temple of Copy's Green Farm at Wighton, Norfolk. The range of cheeses made span from Gouda types such as Wells Alpine, crumbly hard cheeses such as Walsingham. Copy's Green Farm is a leading player in terms of responsible & sustainable farming. Cheese production is fuelled by the energy created on the farm using biomass technology. The Cheese In appearance it could be mistaken for a Brie, Copy's Cloud is a soft bloomy, brie-style cheese made from cows' milk, but much milder than a Brie de Meux for example. With a fluffy white rind Copy's cloud has the appearance of a Brie but is milder in taste with a buttery melting centre. The perfect addition to a summer's day picnic and a nice dry white wine.
