Comte AOC is a smooth, creamy, and nutty mountain cheese made from unpasteurised cow's milk and is one of the most popular and finest French cheeses. With a good intensity of flavour which improves with aging (up to 24 months).
The tasting profile varies according to the soil, climate, and flora – in this case, the cattle graze on lush pines on the mountain slopes. Comte AOC is recognisable by its beige rind and small intermittent holes. Comte AOC was one of the first cheeses to receive AOC recognition in 1958, with further regulations on production being introduced in 1976.
Comte AOC is hand-made to a 1000-year-old recipe. During the aging process, each whole cheese has to be turned weekly and rubbed with brine to create a perfect, fine, smooth cheese. A versatile cheese, good for the board, for fondue melting and in general cooking. Also known as Gruyere de Comte or Compte.
